All of the counter surfaces in the kitchen, including the dish storage shelving, are stainless steel and NSF (National Sanitation Foundation) certified. The bus boxes and bus carts are also NSF certified and can be sanitized using normal sanitation procedures.
3-compartment wash sink for proper washing and sanitation of dishes, service items, pots, pans etc.
The dishwasher (“ware washer”) heats water to sanitation level and has a two minute wash cycle using detergent and sheeting agent to ensure clean, sanitized and spot free dishes, utensils, etc.
Exhaust hood over the proofing oven and range provide extensive fire protection which includes make-up air, a fire suppression system, which dispenses on the range surface as well as in the exhaust stack. The system also includes an automatic shut off to the gas supply at the range. In addition, the make-up air system prevents unnecessary loss of conditioned air through the exhaust system.
There are shut off dampers in the air conditioning system to prevent fire from spreading through the HVAC system.
Our state-of-the-art refrigerator and freezer units ensure the product will stay at recommended temperatures at all times. There is a lock-out feature on both units which allows the units to recover proper temperature after being opened.
Two hand-washing sinks allow users to maintain healthy hygiene practices.
An over-sized grease trap and open floor drains prevent unsanitary water back-flow into the kitchen.
